This class takes you on a journey from coffee’s humble beginnings in Ethiopia, to the major commodity it has become - a source of livelihood for many farmers, producers, roasters and baristas, and a morning ritual enjoyed by millions around the world!

From farming the cherries, through picking (cultivation), to drying (processing), roasting, brewing, then finally drinking, this module looks at the many stages coffee goes through in the supply chain and how each stage is its own “variable” that impacts the quality and resulting flavours in the cup.

Apart from learning about each of the stages in the coffee supply chain, you will also learn about the importance of water quality, equipment cleanliness and general maintenance, and gain insightful knowledge about the sensory process so you can start to identify and describe the many nuances that can be experienced with drinking specialty coffee.

This interactive course demonstrates how to brew espresso, milk based espresso beverages, as well as filter coffee (pour over) and even takes you through “cupping” protocols (professional coffee tasting process).

Q: What is the difference between SCA accreditation and TAFE?
A: SCA standards are much higher, and more relevant to Specialty Coffee, than the TAFE Australia standards. Passing the exam requires superior skills and more detailed product knowledge (that’s specific to Specialty Coffee). Also, SCA is also the only internationally recognised certification system for a Barista.
Q: Do I need to bring anything to the class?
A: You are welcome to a bring pen and paper if you like to write your own notes but everything you need for the course will be provided, including a PDF handout.
Q: Can I arrive and pay on the date?
A: Unfortunately not, we need to plan accurately for each class and require pre-payment. Registration generally closes 3-5 days before the course begins.
